Green Kale & Avocado Pesto
Healthy Eating Vietnam – Kale & Avocado Recipe
A great way to do healthy eating Vietnam! This pesto is so delicious, you can put it through zucchini pasta, scrambled eggs, steam vegetable, salads or oven fresh salon! The possibilities are endless! I love the creamy texture the avocado brings to the plate.
INGREDIENTS
- 1 cup fresh kale
- ½ cup basil or a handful
- Juice of one lemon
- ½ cup of olive oil
- 1 clove garlic
- 1/3 cup parmesan
- 1 avocado
- Pink Salt and pepper to taste
- fresh coriander
DIRECTION
Put the kale, basil, lemon juice, olive oil, garlic, parmesan, avocado, coriander into the food processor and blitz up. Season to taste
It will keep for 1 week.
We love mixing this on our Zucchini Pasta or Cauliflower Rice for an amazingly tasty and healthy meal.
